I was skimming through some of my old recipes when I came across this Tomato and Cucumber Couscous Salad side dish. I honestly can’t remember when the last time I made it was, but I had some couscous in the pantry and it really made me realize how yummy it would be to have some as a side dish for dinner tonight. The good thing about this simple and tasty recipe is that it can literally go on the side to basically anything, and it makes a great party or barbecue dish too!
Do you ever get in a side funk? Meaning do you ever find yourself racking your brain for some dish to serve up with something and have absolutely no ideas? I find myself like that frequently. Usually I work too hard on the main dish and don’t have energy for anything else than a steamed veggie on the side. But this recipe is a great solution for that; you could even make a big batch of it and serve it a couple days in a row or eat it for lunch. It’s so simple!
Tonight I was in the mood for something easy and tasty because I was also working on making some focaccia bread, which is hard for me because I’m not naturally a baker (get the recipe here). And I had all the ingredients already, so when I was waiting on the bread I just boiled some couscous and chopped the veggies and tossed everything together! Matt didn’t sound too excited when he saw it and I saw him inspecting the pot of couscous, because I don’t think he knew what it was and it scared him haha. But when I gave it to him with a piece of leftover salmon he gobbled it right up and said it was delicious. And I agree!
Tomato and Cucumber Couscous Salad (serves 4)
- 1 cup cooked couscous
- 1 tomato, diced
- 1 small cucumber, diced
- 1/2 red onion, finely diced
- 3 Tbsp red wine vinegar (or white wine or champagne vinegar)
- 3 Tbsp olive oil
- 1 Tbsp sugar
Mix the cooked couscous, tomato, cucumber, and onion in a large bowl until combined. In a separate small bowl mix olive oil, vinegar, and sugar, and stir vigorously. Pour the liquid over the couscous salad and stir to combine. Season with salt and pepper to taste. Serve with a main dish or eat by itself 🙂
