I confess that it’s been forever since I’ve cooked. I don’t know why — maybe it’s because it’s summer and I literally collapse when I come home from work everyday from the combination of heat and running around like a maniac. So I’m glad my Try the World box came in the mail last week, because it gave me something to be excited about and get in the kitchen.
This month’s box was Brazil. Yippee! I’m not super familiar with Brazilian food but it’s certainly a cuisine I’d like to explore. I knew that it’s definitely centered around a lot of meat, so I was hoping there would be something vegetarian/pesceterian that I could create. As predicted, the theme of the Brazilian box was Churrasco, which is grilled Brazilian meat. I went my usual route and figured I could basically sub shrimp for the beef and chicken that the recipe called for, and add on some veggies for some delicious shrimp skewers!
This dish was delicious and pretty simple to make. Leave some time for marinating the meat, however. It turned out to be smoky and slightly sweet, and reminded me of a smoky, tangy barbecue sauce (it basically is). And bonus points for being healthy! While usually I would serve it with a side of rice or starch, Matt and I are on a health kick so I served it with broccoli instead. We both gobbled it down in the blink of an eye!
If I wasn’t dieting I would have made the cheesy bread Pão de Queijo that I also got in my box this month, and gone for a full-out Brazilian extravaganza! But it’s going to have to wait until after my vacation in a month because I’m determined to be good until then….
I’m going to give you the recipe that my Try the World box included, except I used slightly less oil and of course subbed shrimp for beef. If you would prefer to use beef or chicken then use 1.5 lbs. Thanks Try the World!
Shrimp Churrasco Skewers (serves 2)
- 1 lb shrimp
- 1 yellow squash or zucchini, halved and sliced
- 1/4 red onion, cut into large chunks
- 4-5 pieces of okra
- 1 4.6 oz jar of churrasco sauce
- 1 Tbsp churrasco spice mix (a mix of paprika, coriander, onion, garlic, mustard, salt and pepper)
- Zest of one lime
- 1/2 tsp salt
- 3 Tbsp olive oil
Soak 8 skewers in water for 30 minutes to soften them. In a large bowl combine all ingredients and mix well until completely coated. Refrigerate for 30 minutes to marinate. When complete, skewer the desired amount of ingredients on each skewer without over-crowding. Line a baking sheet with aluminum foil and arrange the skewers on the baking sheet. Make sure to top these with any extra sauce that remains on the bottom of the bowl. Ignite the broiler of your oven, and broil the skewers for 8-10 minutes, flipping once. Serve and enjoy.
